It is possible to make a variety of delicious milk replacements, using soaked nuts and seeds. As we avoid dairy products in the Sunfood Diet, we have found ways to make great "milks" that even taste much better than regular milk...and much healthier.Almond Milk
1 Part Almonds, soaked over night
3-4 Parts purified or distilled water
1T honey or maple syrup
Blend. Filter.
Banana Shake2 cups of almond milk
1 frozen banana
2T honey or maple syrup
Blend. Serve.
Chocolate Shake2 cups of almond milk
1 frozen banana
4 heaping tablespoon of carob powder
2-4T of honey or maple syrup
Blend. Serve.
Cashew Milk1 cup of soaked cashews
3 cups of water
1T honey or maple syrup
Blend. There is almost no need to strain with cashews, as they are so soft.
Berry Milk2 cups of Cashew Milk, or other nut milk
2/3 cup of fresh or frozen berries
2T honey or maple syrup
Blend all ingredients together. Serve.
Berry-Raisin Milk2 cups of almond or cashew milk
1/2 cup of frozen berries
1 cup of soaked raisins
Put about 1/2 cup of raisin in a bowl and cover with water. Soak more if you think you can use them later. Let them soak in water for 4-12 hours. Drain water (you can drink raisin soak water too), and place one cup of soaked raisins in the blender, along with the rest of the ingredients. Blend at high speed. Serve.
